Local sommelier and wine retailer Ali Rush Carscaden of 15 Degrees C in Templeton has done some commentary for the Krush 92.5 radio about alternatives to the popular Zinfandel. Adelaida Springs Ranch (ASR) Vineyard is the estate home of Rangeland Wines. Located 12 miles west of Paso Robles and about 12 miles from the Pacific Ocean, our 40 acre vineyard is approximately 1,700 feet above sea level in the southern Santa Lucia Range. ASR Vineyard is set in over 1000 acres of rolling, pristine oak woodland, in a mountain valley rich with wildlife and grazing cattle.

This recipe is adapted from Tom Colicchio (of Kraft restaurants and Top Chef); the original was published in Food and Wine. We've made this several times and although time consuming, it's not difficult and it is delicious. We have served these short ribs over mashed potatoes and buttered noodles (not at the same time, of course!) My kids prefer them with mashed potatoes. A good crusty bread for sopping up juices is essential.

Adelaida Springs Ranch cattle are purebred Angus or crossbred with at least 75% Angus blood. We raise our cattle entirely on our home ranch pasture grass with a little supplementary hay and minerals in the fall. We never feed our animals any grain. Our cattle are all at least 50% New Zealand genetics, where they have been breeding grass-fed cattle for over 100 years. Our bulls are imported and bred locally at Fair Oaks Ranch on Adelaida Road in Paso Robles. These cattle are descended from prestigious Turihaua Angus in New Zealand, Australasia's oldest breeder. |
